Jelly-Filled Baked Donuts 
Ingredients:
Yields: 12 donuts
Dry Ingredients:
2 ½ cups all-purpose flour (plus extra for dusting)*
¼ cup granulated sugar
¼ tsp salt
2 ¼ tsp instant yeast (quick acting; 1 packet = 7 grams)
Wet Ingredients:
⅔ cup warm milk (110°F; microwave for about 35 seconds)
4 Tbsp unsalted butter, melted (divided)
2 egg yolks
½ tsp vanilla extract
Filling:
⅓ cup jelly or jam (smooth; no large fruit pieces)
Coating:
⅓ cup granulated sugar (for rolling)
Instructions:
Prepare the Dough:
In a large mixing bowl, whisk together 1 cup of flour, ¼ cup of sugar, 2 ¼ tsp of instant yeast, and ¼ tsp of salt.

Mix Wet Ingredients:
Add warm milk, 3 Tbsp of melted butter, 2 egg yolks, and ½ tsp of vanilla extract. Whisk vigorously until well combined.
Rest the Dough:
Cover the bowl with plastic wrap and let it sit at room temperature for 10 minutes, allowing bubbles to form on the surface.
Knead the Dough:
Gradually add the remaining 1 ½ cups of flour, mixing until the dough holds together and is no longer sticky. Knead in the bowl for 5 minutes. If the dough is sticky, lightly dust your hands with flour while kneading.
First Rise:
Cover the bowl with plastic wrap and let it rise in a 100°F oven for 45 minutes or at room temperature for about 1½ hours, until it has doubled in size.
Preheat the Oven:
Line a baking sheet with parchment paper and preheat your oven to 375°F (190°C).
Shape the Donuts:
Turn the dough out onto a floured surface and roll it to just under ½-inch thick. Use a 2½-inch round cookie cutter to cut out circles. Reroll any scraps to make a total of 12 donuts.
Second Rise:
Place the donuts on the prepared baking sheet. Cover with a tea towel and let them rise in a 100°F oven for 20 minutes or at room temperature for 45 minutes until puffed.
Bake the Donuts:
Bake in the center of the preheated oven at 375°F for 10-12 minutes, or until lightly golden on top.
Coat and Fill:
Once out of the oven, brush each hot donut with the remaining 1 Tbsp of melted butter and roll in granulated sugar to coat lightly. Cut a deep slit in the side of each donut and pipe in the jelly using a pastry bag.
