Choco Swiss Roll Delight
Ingredients:
For the Cake:
– 1/2 cup all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 3 large eggs
– 1/2 cup granulated sugar
– 1/4 cup vegetable oil
– 1 teaspoon vanilla extract
For the Filling:
– 1 cup heavy cream
– 1/4 cup powdered sugar
– 1/2 teaspoon vanilla extract
– 1/2 cup chocolate ganache (store-bought or homemade)
For the Ganache Topping:
– 1/2 cup heavy cream
– 4 oz semi-sweet chocolate, chopped
– 1 tablespoon butter
Directions:
1. Prepare the Cake:
– Preheat your oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan and line it with parchment paper.
– In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt.
– In a large mixing bowl, beat the eggs and granulated sugar until light and fluffy, about 3-4 minutes. Add the vegetable oil and vanilla extract, and mix until combined.
– Gradually fold the dry ingredients into the wet mixture until fully incorporated.
– Pour the batter into the prepared pan and spread it evenly. Bake for 10-12 minutes, or until the cake springs back when touched.
– Once baked, carefully roll the warm cake in a clean kitchen towel dusted with powdered sugar. Allow it to cool completely.
2. Prepare the Filling:
– In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
– Unroll the cooled cake and spread the chocolate ganache evenly over the surface.
– Spread the whipped cream mixture on top of the ganache layer.
– Roll the cake back up tightly, using the towel to help guide it. Place the roll seam-side down on a plate and refrigerate for at least 1 hour.
3. Prepare the Ganache Topping:
– In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
– Remove from heat and add the chopped semi-sweet chocolate and butter. Let it sit for 2 minutes, then stir until smooth and glossy.
– Pour the ganache over the chilled Swiss roll, spreading it evenly with a spatula.
– Refrigerate for an additional 30 minutes to set the ganache.
4. Serve:
– Slice the Choco Swiss Roll Delight and enjoy its creamy, chocolaty goodness!
