One Pot Mexican Rice Casserole
Ingredients:
– 1 pound ground beef
– 1 small onion, diced
– Salt & pepper, to taste
– 2 tablespoons taco seasoning
– 1 teaspoon garlic powder
– 1 cup long grain white rice
– 1 1/2 cups beef broth
– 1 (15-ounce) can corn, drained
– 8 ounces tomato sauce
– 1/2 cup salsa
– 1 cup shredded cheese
Directions:
1. In a large skillet or pot, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened. Drain any excess fat.
2. Add salt, pepper, taco seasoning, and garlic powder. Stir to coat the beef and onion.
3. Stir in the rice, beef broth, corn, tomato sauce, and salsa. Bring to a simmer.
4. Cover the pot and reduce the heat to low. Cook for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
5. Remove the skillet from heat and stir in the shredded cheese. Cover for a few minutes until the cheese is melted.
6. Serve hot and enjoy!
