Gochujang Glazed Salmon
Ingredients:
– 4 salmon fillets
– 2 tablespoons gochujang
– 2 tablespoons soy sauce
– 1 tablespoon honey
– 1 tablespoon rice vinegar
– 2 cloves garlic, minced
– 1 teaspoon sesame oil
– 1 tablespoon grated ginger
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 zucchini, sliced
– 1 red onion, sliced
– 2 tablespoons olive oil
– Salt and pepper to taste
– Sesame seeds and chopped green onions for garnish


Directions:
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, whisk together gochujang, soy sauce, honey, rice vinegar, garlic, sesame oil, and grated ginger.
3. Place salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
4. Brush the gochujang glaze over the salmon fillets.
5. In a large bowl, toss the sliced bell peppers, zucchini, and red onion with olive oil, salt, and pepper.
6. Arrange the vegetables around the salmon on the baking sheet.
7. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
8. Garnish with sesame seeds and chopped green onions before serving.
