Ingredients:
For the Fried Chicken:
Chicken Pieces: 8 (drumsticks and thighs work best)
Buttermilk: 2 cups
All-Purpose Flour: 2 cups
Paprika: 1 tablespoon
Garlic Powder: 1 teaspoon
Onion Powder: 1 teaspoon
Salt & Black Pepper: To taste
Vegetable Oil: For frying
For the Mashed Potatoes:
Potatoes: 2 lbs, peeled and cubed
Butter: 4 tablespoons
Milk: 1/2 cup
Salt & Black Pepper: To taste
Instructions:
Prepare the Chicken:
Marinate: Soak the chicken pieces in buttermilk for at least 1 hour (overnight for best results).
Coating: In a bowl, mix flour, paprika, garlic powder, onion powder, salt, and pepper.
Dredge: Remove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture, shaking off excess.
Fry the Chicken:
Heat Oil: In a large skillet, heat oil to 350°F (175°C).
Fry: Cook chicken pieces until golden and crisp, about 10-15 minutes per side. Drain on paper towels.
Make the Mashed Potatoes:
Boil Potatoes: In a pot, boil the potatoes until tender, about 20 minutes.
Mash: Drain and return to pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
