Chicken Livers on Toast
Ingredients:
250g chicken livers, trimmed and halved
2 tbsp olive oil
1 onion, finely chopped
1 garlic clove, minced
1 tsp smoked paprika
1 tbsp tomato purée
100ml chicken stock
2-3 slices of crusty bread, toasted
Fresh parsley, chopped, to garnish
Salt and pepper, to taste
Instructions:
Heat 1 tablespoon of olive oil in a large frying pan over medium heat.
Add the chicken livers and cook for 3-4 minutes on each side until browned and cooked through. Remove from the pan and set aside.
In the same pan, add the remaining olive oil and cook the onion until softened, about 5 minutes.
Add the minced garlic and smoked paprika, cook for 1 minute until fragrant.
Stir in the tomato purée and cook for another minute.
Pour in the chicken stock and bring to a simmer. Cook for 2-3 minutes until the sauce thickens slightly.
Return the chicken livers to the pan, stirring to coat them in the sauce. Cook for another 2 minutes to heat through.
Season with salt and pepper to taste.
Serve the chicken livers over toasted crusty bread slices.
Garnish with chopped fresh parsley before serving.
