– 2 tablespoons oil
– 1 large onion, finely chopped
– 2 tomatoes, finely chopped or pureed
– 1 tablespoon ginger-garlic paste
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder (adjust to taste)
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon garam masala
– 1/2 cup coconut milk or heavy cream
– 1 cup water (adjust to desired consistency)
– Salt to taste
– Fresh cilantro for garnish
**Instructions:**
1. **Prepare the Eggs:**
– Heat oil in a pan and gently fry the hard-boiled eggs until they are slightly golden. Remove and set aside.
2. **Make the Curry Base:**
– In the same pan, add a bit more oil if needed and sauté the chopped onions until golden brown.
– Add ginger-garlic paste and sauté for another minute.
– Add the tomatoes and cook until they are soft and the oil starts to separate from the mixture.
– Stir in the turmeric, red chili powder, ground cumin, ground coriander, and salt. Cook for a couple of minutes.
3. **Cook the Curry:**
– Pour in the water and bring to a simmer. Cook for about 10 minutes to let the flavors meld.
– Add the coconut milk or heavy cream and stir well.
– Gently add the fried eggs and simmer for another 5-7 minutes, allowing the eggs to absorb the curry flavors.
4. **Finish and Garnish:**
– Stir in garam masala and cook for another 2 minutes.
– Garnish with fresh cilantro before serving.
### Puri
**Ingredients:**
– 1 cup all-purpose flour
– 1/4 teaspoon salt
– 1/2 teaspoon sugar
– 2 tablespoons oil or ghee
– Water (as needed to make the dough)
– Oil for deep frying
**Instructions:**
1. **Prepare the Dough:**
– In a mixing bowl, combine the flour, salt, and sugar.
– Add the oil or ghee and rub it into the flour with your fingers until the mixture resembles coarse crumbs.
– Gradually add water and knead to form a smooth, soft dough. Cover with a damp cloth and let it rest for 15-20 minutes.
2. **Roll and Fry:**
– Heat oil in a deep frying pan or kadhai over medium heat.
– Divide the dough into small balls and roll each ball into a small, thin circle (about 4-5 inches in diameter). Keep the rolled puris covered to prevent drying out.
– Carefully slide each puri into the hot oil. It should puff up almost immediately. Fry until golden brown on both sides.
– Remove and drain on paper towels.
**Serving:**
– Serve the hot, crispy puris with the flavorful egg curry. Enjoy your delicious meal!
