Strawberry Mousse

Ingredients:
250g fresh strawberries, plus extra for garnish
200ml heavy cream
100g sugar
2 tablespoons lemon juice
1 teaspoon vanilla extract
1 packet unflavored gelatin
2 tablespoons water

Instructions:
Prepare Strawberries: Hull and puree the strawberries in a blender until smooth. Strain the puree to remove seeds if desired.
Cook the Puree: In a small saucepan, combine the strawberry puree, sugar, and lemon juice. Cook over medium heat until the sugar dissolves, about 5 minutes. Remove from heat and let it cool slightly.
Dissolve Gelatin: In a small bowl, sprinkle the gelatin over 2 tablespoons of water. Let it sit for a few minutes to bloom, then microwave for 10-15 seconds until dissolved. Stir the gelatin into the warm strawberry mixture.
Whip Cream: In a large mixing bowl, whip the heavy cream and vanilla extract until stiff peaks form.

Combine: Gently fold the strawberry mixture into the whipped cream until fully combined.
Chill: Spoon the mousse into serving dishes and chill in the refrigerator for at least 2 hours or until set.
Serve: Garnish with fresh strawberries and whipped cream before serving.
