Chorizo Croquetas with Aioli
Ingredients:
For the Croquetas:
1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
5 oz (140g) chorizo, finely diced
1/4 cup (30g) all-purpose flour
1 cup (240ml) milk
1/4 cup (25g) grated Parmesan cheese
1/4 teaspoon smoked paprika
Salt and black pepper to taste
1 egg, beaten
1 cup (100g) breadcrumbs
Vegetable oil, for frying
For the Aioli:
1/2 cup (120ml) mayonnaise
2 garlic cloves, minced
1 tablespoon lemon juice
Salt and black pepper to taste
Directions:
Prepare the Croquetas:
Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 3-4 minutes.
Add the garlic and chorizo, and cook for another 5 minutes until the chorizo is browned and cooked through.
Stir in the flour and cook for 1-2 minutes. Gradually add the milk, stirring constantly until the mixture thickens.
Stir in the Parmesan cheese, smoked paprika, salt, and black pepper. Cook for another 2-3 minutes until well combined. Remove from heat and let the mixture cool slightly.
Once cooled, shape the mixture into small balls or cylinders. Dip each croqueta in the beaten egg, then coat with breadcrumbs.
Heat vegetable oil in a deep pan or fryer to 350°F (180°C). Fry the croquetas in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
Prepare the Aioli:
In a small bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix well.
Serve:
Serve the croquetas hot with the aioli on the side for dipping.
