Garlic Shrimp Quinoa
Ingredients:
1 cup quinoa, rinsed
2 cups water or vegetable broth
1 lb (450 g) shrimp, peeled and deveined
2 tablespoons olive oil
4 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
1 tablespoon lemon juice
1/4 cup fresh parsley, chopped
Lemon wedges, for serving
Directions:
In a saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant.
Add the shrimp to the skillet and season with salt and black pepper. Cook for 3-4 minutes, or until the shrimp are pink and
opaque.
Stir in the cooked quinoa, lemon juice, and chopped parsley. Mix well to combine and heat through.
Serve with lemon wedges on the side.
