Crispy Chicken & Smashed Avocado Baps
Ingredients:
2 chicken breasts, pounded to an even thickness
Salt and pepper, to taste
1/2 cup (60g) all-purpose flour
1 large egg, beaten
3/4 cup (75g) breadcrumbs
1/4 cup (25g) grated Parmesan cheese
2 tbsp olive oil
2 ripe avocados
Juice of 1 lime
4 soft baps or burger buns
Lettuce leaves (optional)
Directions:
Season the chicken breasts with salt and pepper. Coat each breast in flour, dip in the beaten egg, and then coat with breadcrumbs mixed with Parmesan cheese.
Heat the olive oil in a large frying pan over medium heat. Cook the chicken breasts for 4-5 minutes on each side until golden and
crispy, and the chicken is cooked through.
While the chicken is cooking, mash the avocados in a bowl and mix in the lime juice. Season with salt and pepper to taste.
To assemble, spread a generous layer of smashed avocado on the bottom half of each bap or bun. Place a crispy chicken breast on top, add lettuce if desired, and cover with the top half of the bap or bun.
Serve immediately.
