CHUCK ROAST WITH VEGETABLES FEAST
This hearty chuck roast with vegetables is the perfect comforting meal for any day, delivering rich flavors and wholesome goodness!
Ingredients:
– 3-4 lbs chuck roast
– 2 cups beef broth
– 4 carrots, peeled and cut into chunks
– 2 tbsp tomato paste
– 3 potatoes, peeled and cut into chunks
– 1 large onion, chopped
– 2 tbsp olive oil
– 3 cloves garlic, minced
– 2 celery stalks, chopped
– Salt and pepper to taste
– 1 tsp dried thyme
– 1 tsp dried rosemary
– 1 bay leaf
Instructions:
1. Preheat your oven to 325°F (165°C).
2. Season the roast with salt and pepper, then sear it in olive oil in a large Dutch oven until browned on all sides. Remove and set aside.
3. In the same pot, saute onions until softened, then stir in garlic. Add carrots, potatoes, and celery, cooking briefly.
4. Mix in the tomato paste, then add beef broth, thyme, rosemary, and bay leaf. Return the roast to the pot, nestling it with the vegetables.
5. Cover and braise in the oven for 3-4 hours, until the roast is fork-tender. Slice and serve with the vegetables.
