Slow Cooker Chicken Tikka Masala
Ingredients:
1 ½ lbs (680g) boneless, skinless chicken thighs, cut into chunks
1 large onion, finely chopped
4 garlic cloves, minced
1 tbsp fresh ginger, minced
2 tsp ground cumin
2 tsp ground coriander
2 tsp paprika
1 tsp ground turmeric
1 tsp garam masala
1 tsp chili powder
14 oz (400g) can diced tomatoes
1 cup (240ml) coconut milk
2 tbsp tomato paste
1 tbsp lemon juice
Salt and pepper, to taste
Fresh cilantro, chopped, for garnish
Cooked rice or naan, to serve
Directions:
Place the chicken thighs, onion, garlic, and ginger in the slow cooker.
In a small bowl, mix the cumin, coriander, paprika, turmeric, garam masala, and chili powder. Sprinkle the spices over the chicken and vegetables.
Add the diced tomatoes, coconut milk, tomato paste, and lemon juice. Stir everything together.
Cover the slow cooker and cook on low for 6-8 hours, or until the chicken is tender.
Season with salt and pepper to taste.
Serve the chicken tikka masala over rice or with naan, garnished with fresh cilantro.
