Ingredients:
For the Donuts:
2 ½ cups all-purpose flour
1 cup granulated sugar
2 tsp baking powder

1 cup buttermilk, room temperature
2 large eggs, room temperature
4 tbsp unsalted butter, melted and slightly cooled
1 tsp vanilla extract

2 cups powdered sugar
4-6 tbsp whole milk
1 tsp vanilla extract
Pinch of salt
Instructions:
Mix dry ingredients. In a large bowl, sift together the flour, sugar, baking powder, baking soda, salt, and nutmeg (if using). Set aside.
Combine wet ingredients. In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until well combined.
Form the dough. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. The dough will be sticky, but avoid overmixing.
Chill the dough. Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hour to make it easier to handle.
Heat the oil. In a large, heavy-bottomed pot or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature.
