Wild Salmon with Radish & Orange Slaw
Ingredients:
4 wild salmon fillets (about 6 oz each)
1 tablespoon olive oil
Salt and black pepper, to taste
1/2 teaspoon smoked paprika (optional)
For the Radish & Orange Slaw:
1 cup radishes, thinly sliced
1 large orange, peeled and segmented
1 small red onion, thinly sliced
2 tablespoons fresh cilantro, chopped
1 tablespoon olive oil
1 tablespoon apple cider vinegar
Salt and black pepper, to taste
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with salt, black pepper, and smoked paprika (if using).
Bake the salmon for 12-15 minutes, or until the fish flakes easily with a fork.
While the salmon is baking, prepare the slaw. In a large bowl, combine the radishes, orange segments, red onion, and cilantro.
In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and black pepper. Pour over the radish and orange mixture and toss to coat.
Serve the salmon fillets topped with the radish & orange slaw.
