WOULD YOU EAT THIS TREMENDOUS CAJUN SALMON AND SHRIMP FEASTΒ
Ingredients:
For the Cajun Seasoning:
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
For the Salmon and Shrimp:
4 salmon fillets (about 6 oz each)
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
1 lemon, sliced
2 tbsp fresh parsley, chopped (for garnish)
Instructions:
Prepare the Cajun Seasoning: In a small bowl, mix together the paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, cumin, salt, and black pepper.
Season the Seafood: Rub the Cajun seasoning evenly over both sides of the salmon fillets and the shrimp.
Cook the Salmon: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side down, and cook for 4-5 minutes per side, or until the salmon is cooked through and has a nice sear. Remove the salmon from the skillet and keep warm.
Cook the Shrimp: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the shrimp and cook for 2-3 minutes per side, or until they are pink and opaque. Be careful not to overcook them.
Serve: Arrange the cooked salmon and shrimp on a serving platter. Garnish with lemon slices and fresh parsley.
This dish pairs wonderfully with a side of rice, roasted vegetables, or a fresh salad!
