Moist Burritos

Moist Burritos
Ingredients:
1 lb ground beef
1/2 cup chopped onion
2 cloves garlic, minced (about 2 teaspoons)
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
4.5 oz diced green chiles
16 oz refried beans
8 oz tomato sauce
10 oz enchilada sauce
15 oz beanless chili (such as Hormel)
6 large flour tortillas (about 12 inches)
2 cups shredded lettuce
3 cups shredded Mexican cheese blend
Minced green onions (for garnish)
Additional toppings as desired (e.g., sour cream, jalapeños, guacamole)
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Cook the Beef Mixture:
In a large skillet over medium-high heat, brown the ground beef and chopped onion until the beef is evenly browned and the onions are softened. Drain any excess grease.
Season the Beef:
Add the minced garlic, cumin, salt, and pepper to the skillet with the beef. Stir well to combine. Mix in the diced green chiles and refried beans until the mixture is well blended. Turn off the heat but keep it warm.

Prepare the Sauce:
In a separate saucepan, combine the tomato sauce, enchilada sauce, and beanless chili. Whisk together until well mixed and heat over medium until heated through and slightly bubbly. Remove from heat and keep warm.
Assemble the Burritos:
Divide the beef and bean mixture into 6 equal portions. Place one flour tortilla on a flat surface, add 1/6 of the beef mixture to the center. Top with some shredded cheese and lettuce (if you prefer cooked lettuce). You can add other vegetables if desired.
Fold the Burritos:
Fold the left and right sides of the tortilla over the filling, then fold the top and bottom sides to form a secure, sealed envelope shape. Repeat for all remaining tortillas.
Arrange and Bake:
Place the burritos seam-side down in two greased 9×13-inch baking dishes. Pour the prepared sauce evenly over the burritos, ensuring they are fully covered.
Bake:
Bake in the preheated oven for 20 minutes or until the burritos are heated through and the sauce is bubbling.
Add Cheese and Finish Baking:
Sprinkle the remaining shredded cheese over the top of the burritos and return to the oven. Bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Serve:
Garnish with minced green onions and serve hot with your favorite toppings such as sour cream, guacamole, or extra salsa.
