Cowboy Pasta Salad
This Cowboy Pasta Salad is loaded with all your favorites – bacon, beef, and cheese!
Ingredients:
– 1 (16 oz) box of bow tie pasta
– 1 pound bacon, cooked and crumbled
– 1 pound lean ground beef, cooked and drained
– 1 ounce packet taco seasoning
– 1 (15 oz) can corn, drained
– 1 (15 oz) can black beans, rinsed and drained
– 1 cup cherry tomatoes, sliced
– 1/2 cup scallions, chopped
– 2 cups shredded cheddar cheese
For the Dressing:
– 1 cup mayonnaise
– 1/4 cup barbecue sauce
– 2 tablespoons Worcestershire sauce
Directions:
1. Cook the Pasta:
– Bring a large pot of salted water to a boil. Add the bow tie pasta and cook until al dente according to package instructions. Drain and set aside to cool.
2. Prepare the Dressing:
– In a small bowl, whisk together the mayonnaise, barbecue sauce, and Worcestershire sauce until smooth and well combined.
3. Assemble the Salad:
– In a large mixing bowl, combine the cooked and cooled pasta, crumbled bacon, cooked ground beef, taco seasoning, corn, black beans, cherry tomatoes, scallions, and shredded cheddar cheese.
4. Toss with Dressing:
– Pour the dressing over the salad and toss to coat everything evenly.
5. Chill and Serve:
– Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
