Prawn Fried Rice



Ingredients:
1 lb (450g) raw prawns, peeled and deveined
2 cups (400g) cooked rice, preferably cold
2 tbsp vegetable oil
2 eggs, beaten
1 small onion, finely chopped
1 carrot, diced
1/2 cup (75g) frozen peas
3 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
2 green onions, sliced
Salt and pepper, to taste

 

Directions:
Cook the Prawns: Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the prawns and cook for 2-3 minutes until pink and cooked through. Remove from the pan and set aside.
Scramble the Eggs: In the same pan, add the remaining tablespoon of oil. Pour in the beaten eggs and scramble them until just set. Remove and set aside with the prawns.
Cook the Vegetables: Add the onion and carrot to the pan and cook for 3-4 minutes until softened. Add the frozen peas and cook for another 2 minutes.
Fry the Rice: Add the cold rice to the pan, breaking up any clumps with a spoon. Stir-fry the rice with the vegetables for 5 minutes, until heated through.
Combine and Season: Return the prawns and scrambled eggs to the pan. Add the soy sauce, oyster sauce, sesame oil, salt, and pepper. Stir everything together until well combined and heated through.
Serve: Garnish with sliced green onions and serve immediately.
