Barbecue Sesame Sweet Potatoes
Ingredients:
4 medium sweet potatoes, scrubbed and halved lengthwise
2 tbsp olive oil
1 tbsp sesame oil
2 tbsp sesame seeds
1 tbsp honey
1 tbsp soy sauce
1 garlic clove, minced
1/4 tsp chili flakes (optional)
1 tbsp chopped fresh cilantro, for garnish
Directions:
Preheat the barbecue or grill to medium-high heat.
Brush the sweet potato halves with olive oil and place them cut-side down on the grill.
Cook for about 15-20 minutes, turning occasionally, until they are tender and have nice grill marks.
Meanwhile, in a small bowl, mix together sesame oil, sesame seeds, honey, soy sauce, minced garlic, and chili flakes.
Once the sweet potatoes are cooked, brush them with the sesame mixture and cook for an additional 2-3 minutes.
Remove from the grill and sprinkle with chopped cilantro before serving.
