Next Level Fried Chicken
Ingredients:
2 lbs chicken drumsticks or thighs
2 cups buttermilk
2 cups all-purpose flour
1/4 cup cornstarch
2 tsp paprika
1 tsp cayenne pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
1/2 tsp baking powder
Vegetable oil, for frying
Directions:
Marinate Chicken: Place the chicken drumsticks or thighs in a large bowl and pour the buttermilk over them. Cover and refrigerate for at least 4 hours, or overnight, to marinate.
Prepare Coating: In a shallow dish, mix together the flour, cornstarch, paprika, cayenne pepper, garlic powder, onion powder, salt, black pepper, and baking powder.
Coat Chicken: Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge each piece in the flour mixture, pressing firmly to ensure a thick, even coating. Place the coated chicken on a wire rack and let it rest for 10 minutes.
Heat Oil: Pour vegetable oil into a large, deep skillet or Dutch oven to a depth of about 1 inch. Heat the oil over medium-high heat until it reaches 350°F (175°C).
Fry Chicken: Working in batches, carefully lower the chicken into the hot oil. Fry for 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through. The internal temperature should reach 165°F (75°C).
Drain and Serve: Remove the fried chicken from the oil and place it on a paper towel-lined plate to drain. Serve hot with your favorite dipping sauces.
