Fruit Salad Cheesecake Recipe
Ingredients:
• 1 1/2 cups graham cracker crumbs
• 1/4 cup granulated sugar
• 1/2 cup unsalted butter, melted
• 2 (8 oz) packages cream cheese, softened
• 1 cup powdered sugar
• 1 tsp vanilla extract
• 1 1/2 cups heavy whipping cream
• 1 cup sliced strawberries
• 1 cup blueberries
• 1 cup kiwi, peeled and sliced
• 1 cup pineapple chunks
• Fresh mint leaves for garnish
Directions:
1. Prepare the Crust: In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes.
2. Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, beating until well combined.
3. Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
4. Assemble the Cheesecake: Spread the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
5. Add Fruit Topping: Arrange sliced strawberries, blueberries, kiwi, and pineapple chunks on top of the cheesecake. Refrigerate for at least 4 hours, or until set.
6. Garnish and Serve: Before serving, garnish with fresh mint leaves. Slice, serve, and enjoy!
